my island life
Aah, the abundance of mangoes! In the high mango season they lie everywhere under mango trees for everybody to pick. 3t from Las Casas de la Selva makes a yummy (originally Indian) mango pickle from unripe mangoes. They are mighty spicy so i usally save most of the spices and the oil in my pickle jar and put some very ripe mango as an encore. I call my concoction: the sweet heat of the tropics. Lol
On a hot day, I put the mangoes in the fridge...deeelicious! For something salty & spicy, we eat green mangoes with...guess what...salt and pepper.
MmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmMinerva.GG do you know the poem by John Agard, "English Girl Eats Her First Mango"?
