Aah, the abundance of mangoes! In the high mango season they lie everywhere under mango trees for everybody to pick. 3t from Las Casas de la Selva makes a yummy (originally Indian) mango pickle from unripe mangoes. They are mighty spicy so i usally save most of the spices and the oil in my pickle jar and put some very ripe mango as an encore. I call my concoction: the sweet heat of the tropics. Lol
